how do you use the blasted things after you catch them?

You have to go to the "Professions" tab in the lower right corner. Once you are there, under the "Gathering" professions, you select fisherman. That will allow you "set nets" and buy bait and catch fish. Once you catch them you can use them in other professions to make stuff you want or to sell in the auction house. You can click on the map button to see where you can set nets but you will not see them until you select fisherman is your profession.
